- 2 cups cooked white rice
- 2 chicken breasts, diced
- 2 tablespoons vegetable oil
- 1 cup frozen mixed vegetables
- 2 cloves garlic, minced
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Equipment
- Wok or large skillet
- Cooking utensils
- Knife and cutting board
- Measuring cups and spoons
Method
- Heat the wok or skillet over high heat and add the vegetable oil.
- Add the diced chicken and stir-fry until browned and cooked through.
- Add the minced garlic and frozen vegetables, and stir-fry for 1-2 minutes until heated through.
- Push the chicken and vegetables to the side of the wok, and add the beaten eggs to the center. Scramble the eggs until cooked, and then mix with the chicken and vegetables.
- Add the cooked rice to the wok, and stir-fry everything together for 1-2 minutes.
- Add the soy sauce, sesame oil, salt, and pepper to taste, and stir-fry for another minute or so until everything is well combined and heated through.
- Serve hot, garnished with sliced green onions or chopped cilantro if desired.
Notes
