- 4 medium-sized potatoes
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 2 tbsp oil
- Salt to taste
- Coriander leaves for garnishing

Method
- Wash the potatoes and peel off the skin. Cut them into small cubes and keep them aside.
- Heat oil in a pressure cooker and add mustard seeds and cumin seeds. Let them splutter.
- Add chopped onion and green chilies. Sauté till the onion turns translucent.
- Add ginger-garlic paste and sauté for a minute.
- Add the chopped tomatoes and sauté till they become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, garam masala powder, and salt. Mix well.
- Add the cubed potatoes and mix well with the masala.
- Add 1/4 cup of water and pressure cook for 2 whistles.
- Once the pressure is released, open the cooker and cook on medium flame for 5 minutes till the masala thickens.
- Garnish with chopped coriander leaves.
- The Potato Masala is ready to be served with rice.
