- 1 Onion
- 1 Green Bell Pepper
- 1 Red Bell Pepper

- 1 Tsp. of Garlic Powder
- 1 Tsp. of Cumin
- 1 Tsp. of Adobo Seasoning
- 2 Potatoes
- 2 Tbsp. of Olive Oil

Method
- Soak the salted cod in water for at least 24 hours, changing the water every 4 hours to remove the excess salt.
- After soaking, drain the water and cut the cod into small pieces.
- Chop the onion and bell peppers into small pieces and set aside.
- Peel and chop the potatoes into small cubes and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and bell peppers and cook until the onions are translucent and the peppers are softened.
- Add the chopped cod to the pot and stir to combine with the onions and peppers.
- Add the can of tomato sauce, water, oregano, garlic powder, cumin, and adobo seasoning to the pot and stir to combine.
- Add the chopped potatoes to the pot and stir to combine.
- Cover the pot and cook over medium heat for approximately 1 hour or until the potatoes are cooked through.
- Serve hot with a side of white rice.
