Method

  6. Push the rice to one side of the wok or pan and add the beaten eggs to the other side. Scramble the eggs until they're cooked through, then mix them into the rice.
  7. Add the sliced green onions and stir-fry for another minute.
  8. Remove from heat and serve hot.

  • Use leftover rice that has been chilled in the fridge overnight for best results.
  • You can substitute the chicken with shrimp, pork, or tofu.
