  • 1 teaspoon sesame oil

Method

  1. Prepare the vegetables and herbs by washing and cutting them into thin strips. Set on a plate or platter.
  2. Cook the vermicelli noodles according to package instructions. Drain and set aside.
  3. If using shrimp, cook and chop them into small pieces. Set aside.
  4. In a small bowl, whisk together the hoisin sauce, peanut butter, soy sauce, rice vinegar, sesame oil, garlic, and warm water until smooth.
  5. Fill a large bowl with warm water. Dip one rice paper wrapper into the water and let it soak for about 10 seconds, or until it becomes pliable.
  6. Place the softened rice paper wrapper onto a cutting board or other flat surface.
  7. Arrange a small amount of the vegetables, herbs, noodles, and shrimp (if using) onto the lower third of the wrapper.
  8. Fold the sides of the wrapper in towards the center, then roll the wrapper up tightly to enclose the filling.
  9. Repeat with the remaining ingredients until all of the filling is used up.
  10. Serve the spring rolls with the dipping sauce on the side.
