Description

Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves
  • 1 onion, chopped
  • 2-3 green chilies, chopped
  • 1 tsp ginger garlic paste
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tsp garam masala
  • 1 tsp salt
  • 2 tbsp oil

Equipment

  • Pressure Cooker
  • Pan
  • Knife
  • Cutting Board

Method

  1. Wash the basmati rice in water until the water runs clear. Soak the rice in water for 30 minutes.
  2. In a blender, add the fresh mint leaves, fresh coriander leaves, green chilies, and ginger garlic paste. Blend until it forms a smooth paste.
  3. Turn on the stove and heat a pan. Add oil to the pan.
  4. Once the oil is hot, add cumin seeds and fennel seeds. Let them splutter for a few seconds.
  5. Add chopped onions and sauté them until they turn translucent.
  6. Add the blended paste to the pan and sauté for 2-3 minutes.
  7. Add garam masala and salt to the pan and mix well.
  8. Add the soaked basmati rice to the pan and mix well. Cook for 2-3 minutes.
  9. Transfer the rice mixture to a pressure cooker. Add 2 cups of water to the pressure cooker.
  10. Cook on medium heat for 1 whistle. Turn off the heat and let the pressure release naturally.
  11. Once the pressure has released, fluff the rice with a fork.
  12. Pudina rice is ready to serve.

Notes

  • Add more or less green chilies depending on your spice tolerance.
  • You can also add vegetables like peas, carrots, and potatoes to the recipe.
