Description

- 1 cup basmati rice
- 2 cups water
- 1/2 cup fresh mint leaves
- 1/2 cup fresh coriander leaves
- 1 onion, chopped
- 2-3 green chilies, chopped
- 1 tsp ginger garlic paste
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp garam masala
- 1 tsp salt
- 2 tbsp oil
Equipment

- Pan
- Knife
- Cutting Board
Method
- Wash the basmati rice in water until the water runs clear. Soak the rice in water for 30 minutes.
- In a blender, add the fresh mint leaves, fresh coriander leaves, green chilies, and ginger garlic paste. Blend until it forms a smooth paste.
- Turn on the stove and heat a pan. Add oil to the pan.
- Once the oil is hot, add cumin seeds and fennel seeds. Let them splutter for a few seconds.
- Add chopped onions and sauté them until they turn translucent.
- Add the blended paste to the pan and sauté for 2-3 minutes.
- Add garam masala and salt to the pan and mix well.
- Add the soaked basmati rice to the pan and mix well. Cook for 2-3 minutes.
- Transfer the rice mixture to a pressure cooker. Add 2 cups of water to the pressure cooker.
- Cook on medium heat for 1 whistle. Turn off the heat and let the pressure release naturally.
- Once the pressure has released, fluff the rice with a fork.
- Pudina rice is ready to serve.
Notes
- Add more or less green chilies depending on your spice tolerance.
- You can also add vegetables like peas, carrots, and potatoes to the recipe.
