Ingredients

  • 1 cup basmati rice
  • 1/2 cup chana dal
  • 1/2 cup chopped onions
  • 1/2 cup chopped tomatoes

  • 1/2 cup chopped peas
  • 1/2 cup chopped potatoes
  • 1/4 cup raisins
  • 1/4 cup cashews
  • 1/4 cup ghee or clarified butter
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp fennel seeds
  • 1 tsp black peppercorns
  • 1 cinnamon stick
  • 2 bay leaves
  • 2 cloves
  • 2 green cardamom pods
  • 2 black cardamom pods
  • 3 cups water
  • Salt to taste

Equipment

  • A deep-bottomed pan with a lid
  • A mixing spoon

Method

  1. Wash the rice and soak it in water for 30 minutes.
  2. Wash the chana dal and soak it in water for 30 minutes.
  3. In a mortar and pestle, crush the cumin seeds, coriander seeds, fennel seeds, black peppercorns, cinnamon stick, bay leaves, cloves, green cardamom pods, and black cardamom pods.
  4. Heat ghee in a deep-bottomed pan and add chopped onions. Saute until the onions turn golden brown.
  5. Add the crushed spices and saute for a few seconds.
  6. Add chopped tomatoes and saute until they turn soft.
  7. Add chopped carrots, peas, and potatoes. Saute for a few minutes.
  8. Drain the water from the soaked rice and chana dal. Add them to the pan and saute for a few minutes.
  9. Add water and salt to taste. Mix well and cover the pan with a lid.
  10. Cook on low flame until the rice and dal are fully cooked.
  11. In a separate pan, roast the cashews and raisins in ghee until golden brown.
  12. Garnish the cooked rice with roasted cashews and raisins.
