- 1 pound of prawns, peeled and deveined
- 1 package of rice noodles
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 tablespoon of grated ginger
- 1 tablespoon of sesame oil
- 2 tablespoons of soy sauce
- 2 tablespoons of oyster sauce
- 1 tablespoon of cornstarch
- 1/4 cup of water
- Salt and pepper to taste
- Chopped green onions for garnish

Method
- Prepare rice noodles according to package instructions, then drain and set aside.
- Heat sesame oil in a wok or large skillet over medium-high heat. Add garlic and ginger, and stir-fry for 30 seconds.
- Add prawns and stir-fry until they turn pink and are cooked through, about 3-4 minutes. Remove from the wok and set aside.
- Add sliced onions to the wok and stir-fry for 2-3 minutes until they are soft and translucent.
- Add sliced bell peppers and continue to stir-fry for 2-3 minutes until they are slightly softened.
- In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, and water until well combined. Pour the mixture over the vegetables and stir to coat.
- Return the prawns to the wok and stir-fry for an additional 2-3 minutes until everything is well combined and heated through.
- Add cooked rice noodles to the wok and stir-fry for 1-2 minutes until the noodles are coated in the sauce and heated through.
- Season with salt and pepper to taste, and garnish with chopped green onions.
