For the rice:- 1 cup of rice
- 2 cups of water
- 1 tbsp oil
- 1/2 tsp salt

- 1/4 cup jaggery

- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/4 tsp fenugreek seeds
- 1/4 tsp asafoetida
- 1/2 tsp turmeric powder
- 2 tbsp red chili powder
- 1/4 cup roasted peanuts

Method
- Wash the rice and cook it with 2 cups of water, 1 tbsp of oil, and 1/2 tsp of salt in a pressure cooker for 3-4 whistles. Once done, let it cool.
- Soak tamarind in hot water for 10-15 minutes and extract the pulp.
- Heat oil in a pan and add mustard seeds, cumin seeds, fenugreek seeds, and asafoetida. Let them splutter.
- Add turmeric powder and red chili powder and mix well.
- Add tamarind pulp and jaggery and mix well. Let it cook on medium flame for 5-7 minutes.
- Add roasted peanuts and mix well.
- Add the cooked rice to the pan and mix well.
- Cover and cook for 5-7 minutes on low flame.
- Once done, turn off the heat and let it cool.
- Serve hot.
Notes
- You can adjust the level of spiciness by adding more or less red chili powder.
- If you don't have jaggery, you can use brown sugar or white sugar instead.
- You can also add vegetables like peas, carrots, or beans to make it more nutritious.
