  1. Wash the rice and cook it with 2 cups of water, 1 tbsp of oil, and 1/2 tsp of salt in a pressure cooker for 3-4 whistles. Once done, let it cool.
  2. Soak tamarind in hot water for 10-15 minutes and extract the pulp.
  3. Heat oil in a pan and add mustard seeds, cumin seeds, fenugreek seeds, and asafoetida. Let them splutter.
  4. Add turmeric powder and red chili powder and mix well.
  5. Add tamarind pulp and jaggery and mix well. Let it cook on medium flame for 5-7 minutes.
  6. Add roasted peanuts and mix well.
  7. Add the cooked rice to the pan and mix well.
  8. Cover and cook for 5-7 minutes on low flame.
  9. Once done, turn off the heat and let it cool.
  10. Serve hot.

Notes

  • You can adjust the level of spiciness by adding more or less red chili powder.
  • If you don't have jaggery, you can use brown sugar or white sugar instead.
  • You can also add vegetables like peas, carrots, or beans to make it more nutritious.
