- 1 lb chicken breast, sliced into thin strips
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp cornstarch
- 1/4 cup water
- 8 oz rice noodles, cooked according to package directions
- Salt and pepper to taste

Method
1. In a bowl, whisk together soy sauce, oyster sauce, cornstarch, and water. Set aside. 2. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. 3. Add the chicken and stir-fry for 2-3 minutes until golden brown. Remove from the wok and set aside. 4. Add the remaining tablespoon of vegetable oil to the wok. 5. Add the garlic and ginger and stir-fry for 30 seconds. 6. Add the onion and stir-fry for 1-2 minutes until softened. 7. Add the bell peppers and stir-fry for 1-2 minutes until slightly softened. 8. Return the chicken to the wok and stir-fry for 1-2 minutes until heated through. 9. Pour the sauce over the chicken and vegetables and stir-fry for 1-2 minutes until the sauce has thickened. 10. Serve the stir fry over cooked rice noodles.Notes
