Ingredients

  • 1 cup rice flour
  • 1/2 cup urad dal flour
  • 1 onion, finely chopped
  • 1 green chilli, finely chopped
  • 1/2 tsp ginger paste
  • 1/4 tsp asafoetida
  • 1 tsp cumin seeds
  • 1 tsp salt
  • Oil, for deep frying

Equipment

  • Large mixing bowl
  • Frying pan
  • Slotted spoon

Method

  1. In a large mixing bowl, combine the rice flour, urad dal flour, chopped onions, green chilli, ginger paste, asafoetida, cumin seeds, and salt. Mix well.
  2. Add water to the mixture, a little at a time, and knead into a smooth dough. The dough should be thick and not too watery.
  3. Heat oil in a frying pan over medium heat.
  4. Take small portions of the dough and roll them into small balls.
  5. Once the oil is hot, gently drop the balls into the oil and fry until golden brown. Make sure to fry them in small batches to avoid overcrowding the pan.
  6. Remove the Punugulu from the oil using a slotted spoon and drain the excess oil on a paper towel.
  7. Repeat the process until all the dough is used up.
  8. Serve hot with your favorite chutney or sauce.

Notes

  • You can also add finely chopped curry leaves and coriander leaves to the dough for added flavor.
  • If the dough is too dry, add a little more water. If it is too watery, add a little more rice flour.
  • Make sure the oil is hot before adding the Punugulu to the pan. If the oil is not hot enough, the Punugulu will not cook properly and will absorb more oil.
