Method
1. Heat the olive oil in a large skillet or wok over medium-high heat. 2. Add the chicken and cook for 5-7 minutes, until browned on all sides. 3. Remove the chicken from the pan and set aside. 4. Add the garlic to the pan and cook for 1-2 minutes, until fragrant. 5. Add the cauliflower rice and stir fry for 3-4 minutes, until tender. 6. Add the bell pepper, onion, snow peas, and mushrooms to the pan and stir fry for another 5-7 minutes, until the vegetables are tender. 7. Add the cooked chicken back to the pan. 8.
