- 1 cup glutinous rice
- 2 cups water
- 1 can coconut milk
- 1/2 cup sugar
- 3-4 pandan leaves
- 1/2 tsp salt
- 1/4 cup roasted peanuts, chopped
- 1/4 cup coconut flakes, toasted

Method
- Wash the glutinous rice and soak it in water for 30 minutes.
- Drain the rice and put it into a large pot with 2 cups of water and pandan leaves. Bring to a boil, then reduce heat to low and cover.
- Cook for 15-20 minutes, or until the rice is soft and the water has been absorbed.
- Remove the pandan leaves and stir in the coconut milk, sugar, and salt. Cook for another 10-15 minutes, stirring frequently.
- Meanwhile, heat a small pan over low heat and toast the coconut flakes until golden brown. Set aside.
- Once the pudding is thick and creamy, remove from heat and let cool for 5-10 minutes.
- Serve the pudding in bowls, topped with chopped peanuts and toasted coconut flakes.
Notes
